Chinese sweet soups are relatively healthy since they are pretty much fat-free and can be made with very little sugar. After days of overindulging with cookies and cupcakes loaded with butter and sugar, I craved a lighter snack so this was perfect. <\/p>\n<p>But then, that can of sweetened condensed milk seemed perfect to make it a little richer and tastier. So I put it in instead of sugar. Just a little won&#8217;t hurt right? Right! <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/alittlerice.com\/wp-content\/uploads\/2013\/11\/redBeanSoup_2.jpg\" alt=\"redBeanSoup_2\" width=\"623\" height=\"501\" class=\"aligncenter size-full wp-image-102\" srcset=\"https:\/\/alittlerice.com\/wp-content\/uploads\/2013\/11\/redBeanSoup_2.jpg 623w, https:\/\/alittlerice.com\/wp-content\/uploads\/2013\/11\/redBeanSoup_2-225x180.jpg 225w\" sizes=\"(max-width: 623px) 100vw, 623px\" \/><\/p>\n<p>And I remembered the half cup of glutenous rice flour left and joyfully made them into the easiest chewy little balls. <\/p>\n<p>I made them roughly the same size. Roughly, so they look hand-made. Cute, kindda round, and definitely delicious.  <\/p>\n<p>[recipe]<\/p>\n<p>[ingredients]<br \/>\nRed Bean Soup<\/p>\n<ul>\n<li>1\/2 cup Red Beans (Azuki beans)<\/li>\n<li>2.5 cups Water<\/li>\n<li>Sugar, to taste (or Condensed Milk for a slightly creamier version)<\/li>\n<\/ul>\n<p>Glutenous Rice Ball (makes about 20)<\/p>\n<ul>\n<li>1\/2 cup Glutenous Rice Flour<\/li>\n<li>2 Tbsp Water<\/li>\n<\/ul>\n<p>[directions]Red Bean Soup:<\/p>\n<ol>\n<li>Soak the red beans overnight in 3 cups of cold water<\/li>\n<li>Rinse the soaked red beans in cold water<\/li>\n<li>Heat the red beans and 2.5 cups of water on high until water boils<\/li>\n<li>Turn the heat to a very low simmer and cook for 1 hour<\/li>\n<li>Taste test to make sure the beans are cooked through<\/li>\n<li>Sweeten to taste<\/li>\n<\/ol>\n<p>Glutenous Rice Ball:<\/p>\n<ol>\n<li>Mix all ingredients together and keep mixing until it starts to form a dough ball then knead until it comes together well<\/li>\n<li>Cook in a pot of boiling water for 5-8 minutes until soft and cooked through.
