Ripe and buttery avocados are one of K’s favorite foods. We usually make tons of guacamole as a snack. As delicious and healthy as the guacamole is, it unfortunately encourages copious consumption of large bags of salty and crunchy tortilla chips. Finishing a 1-pound+ over-sized bag of chips while watching a football game is not uncommon! So I made this version instead with all the same fresh ingredients as a bright side salad to discourage our scary chip binge. Creamy avocados, crunchy spicy onions and fragrant cilantro with fresh lime that brings it all together. Enjoy!

Makes 2 servings • this recipe can also be made into a delicious guacamole if all the ingredients are minced instead of diced and mashed together
[ingredients]
- 2 ripe Avocados
- 1/2 Tomato
- 1/2 Onion
- 1/2 Lime
- 1 clove Garlic
- A few sprigs of cilantro
- pinch of salt
- pinch of ground black pepper
[directions]
1. Mince tomato, onion, garlic and cilantro
2. Cube avocados
3. Mix everything together including salt and pepper
